    有些食物,注定与“酱”生死与共。 正如东美档的烤豆干、鲜蚶、田螺,没酱不行,非酱不可。 俗话说得好,柴米油盐酱醋茶,自古以来,“酱”在日常饮食中的地位,可见一斑。 鱿鱼蓊菜与虾膏酱、猪场粉与甜酱辣椒酱、沙爹与沙爹酱等等,有酱没酱,天差地别。 窝在一条陈陋老巷里的东美档,尽管没有宽敞明亮的铺面,却以其自行调配的酱料,俘虏了食客的味蕾超过30年。 每当夜幕低垂,摊主便会在摆满食材和配料的长方形小摊桌上即场调配酱料。在昏黄闪烁的灯光中,麻油、生抽、辣椒、甜酱、虾膏、酸梅酱、酸柑汁和炒香的花生碎等等,在他手起匙落之间,随即混合成男女老少皆“雅俗共赏”的独家酱料,为烤豆干、鲜蚶和田螺披上最慑人胃口的乌亮新装。
